This is the base of frangipane. It provides:

🧁 Recipe: Protein-packed frangipane madeleines
📝 Ingredients (12 to 16 madeleines depending on the mold)
Base

80g of almond flour

40 g of pure vanilla whey isolate

1 whole egg
-
120g of skyr or fromage blanc
-
20g of almond puree or almond butter
-
30 ml of almond milk (or other milk)
-
1 tsp bitter almond flavoring

1 tsp liquid vanilla
-
1 level teaspoon of baking powder
-
20 g of honey
🍳 Step-by-step preparation
Step 1: Preparing the dough
Mix all the ingredients together until you obtain a thick but pliable, smooth and homogeneous dough.
👉 If the dough seems too thick, simply add 1 to 2 tablespoons of milk.
Step 2: Resting in the cold (the secret to madeleines)
Lightly grease the madeleine mold, then fill each cavity ¾ full .
Next, a key step:
➡️ 10 minutes in the refrigerator before cooking.
It is this thermal shock that allows for a nice hump and a very soft texture.
Step 3: Cooking

Preheat oven to 180°C

Static heat mode (top + bottom)

Cooking time: approximately 10 minutes
The madeleines should be lightly golden and still soft to the touch.
