Wondering what the difference is between classic crepes and light crepes? Light crepes are a never-ending feast! Their airy texture doesn't weigh you down thanks to the lightness of the cornstarch. They can be enjoyed without feeling guilty since they're easy on the waistline, especially if the filling is healthy! Of course, we're sharing this incredible recipe with you so you can enjoy the little pleasures of Candlemas.


Ingredients

For 4 people:

  • 100 g of flour
  • 100 g of cornstarch
  • 2 eggs
  • 50 cl of skimmed milk
  • 2 tablespoons of neutral oil
  • 1 pinch of salt


Preparation

Preparation time: 10 min

Cooking time: 20 min

    1. In a bowl, sift the flour and cornstarch.
    2. Add the eggs, oil and salt.
    3. Mix gently, then gradually pour in the milk while continuing to mix. Use your biscoteaux or an electric mixer until the batter is runny, smooth, and lump-free.
    4. Let the pancake batter rest for one hour. Prepare the pan by oiling it, then let it heat for a few minutes.
    5. Pour a ladleful of batter into the pan to cover the bottom.
    6. Let your pancakes brown for about 1 minute on each side, then place them on a plate.
