A flavorful cake, but much lighter and better suited to our fitness goals. It's the perfect balance between indulgence and a healthy dessert, ideal for satisfying your sweet tooth while maintaining a balanced diet. We're sharing our recipe for a healthy Epiphany cake that's both delicious and nutritious!
The ingredients
To make this healthy galette des rois, here's what you'll need:
- 2 wholemeal puff pastry sheets : Choosing wholemeal puff pastry for more fiber and nutrients is much better than classic pastry, and it helps avoid blood sugar spikes!
- 40g of agave syrup : A natural sweetener, milder than refined sugar and with a lower glycemic index. It provides just the right amount of sweetness without spiking your blood sugar.
- 200g of almond flour : A source of plant-based protein and healthy fats. It also gives a wonderfully creamy texture to your galette filling.
- 2 compotes without added sugar : Lightly sweetened and full of vitamins, the compotes add moisture to the galette and replace traditional butter.
- 3 eggs : Rich in protein and amino acids, they give the galette a perfect texture while providing a little boost to your recovery.

The recipe for a healthy king cake
Let's go, here's the detailed recipe to make your healthy galette des rois in a few simple and quick steps.
1. Prepare the filling
In a large bowl, start by mixing the agave syrup, unsweetened fruit compotes, and 2 eggs. Mix well until smooth. Then add the almond flour and whey protein powder and mix again until you have a smooth, homogeneous batter. This base is the key to the creamy and delicious texture of your pancake.
2. Prepare the dough
Spread the first sheet of puff pastry onto a baking sheet lined with parchment paper. Make sure it is smooth and does not extend beyond the edges of the baking sheet.
3. Add the filling and the bean
