Our sweet potato pancakes

February is fast approaching, and with February comes... Candlemas! A perfect time to enjoy yourself with family or friends. But this year, why not change things up a bit from traditional pancakes? We've already shared with you a recipe for healthy, protein-packed pancakes and our light and tasty pancakes . Today, it's time for pancakes! And not just any pancakes: sweet potato pancakes.

Rest assured, this recipe is as delicious as it is easy to make. These pancakes provide energy thanks to the sweet potato, which is rich in complex carbohydrates. In 20 minutes of preparation and 15 minutes of cooking, you can make 15 ultra-delicious pancakes.


Ingredients for sweet potato pancakes

Here's what you need to make about 15 pancakes:

  • 400g cooked sweet potato flesh
  • 4 eggs
  • 50 g of flour of your choice (wheat flour, rice flour, spelt flour... according to your preferences)
  • 1/2 sachet of baking powder
  • 40 cl of fermented milk

Tip: Choose wholemeal flour to increase your fiber intake, ideal for optimal digestion.


Sweet Potato Pancake Recipe


Step 1: Preparing the sweet potato

Start by peeling the sweet potato and cutting it into small cubes. Steam them for 10 minutes until tender. This gentle cooking process preserves all the sweet potato's nutrients.

Place the cooked sweet potato cubes in the bowl of your blender. Add the eggs, flour, and baking powder. Blend until smooth. Then gradually pour in the fermented milk, blending between each addition. The batter should be smooth but not too runny.

  • For a sweet version: add a pinch of cinnamon or vanilla.
  • For a savory version: opt for a hint of paprika or aromatic herbs.


Step 3: Cooking the pancakes

Heat a non-stick skillet over medium heat and lightly oil it with a paper towel. Pour a ladleful of batter into the skillet and cook for about 1 minute. Once bubbles appear on the surface, flip the pancake and cook for another minute.

Repeat this process until all the batter is used up. Remember to keep the pancakes warm while you continue cooking.
