Our recipe for air fryer protein bugnes

Looking for a delicious recipe that's both crispy and soft, and rich in protein? Good news, we've prepared a new take on traditional bugnes, but in a fit way! No more frying in oil, make way for the air fryer for ultra-light cooking, without sacrificing taste or texture. And of course, we're boosting it all with a dose of protein to satisfy your muscles and your palate. Come on, put on your apron, let's get cooking!

Why protein bugnes?

We love bugnes, but let's be honest, they're not necessarily ideal for our fitness goals. With their oil-based cooking and low protein content, they can weigh heavily on the next day's workout. By replacing some of the flour with whey and opting for air fryer cooking, you get bugnes that are much more nutritionally interesting. Less fatty, higher in protein, and still just as delicious!

Ingredients (for about 10 bugnes):

  • 200 g wholemeal flour (or oat flour)
  • 30g of Squad Nutrition Pure Whey Isolate protein powder
  • 1 egg
  • 50g of 0% Greek yogurt
  • 10g sweetener or coconut sugar
  • 1 tsp baking powder
  • 1 tsp orange blossom water (optional)
  • 1/2 tsp vanilla extract (optional)
  • 1 pinch of salt
  • 1 tsp melted coconut oil (or other light oil)

For the finishing touch:

A little icing sugar or cinnamon (with bugnes it's really delicious!)

The preparation


Prepare the dough

In a bowl, mix together the flour, protein powder, sweetener, baking powder, and salt.
Add the egg, yogurt, melted coconut oil, orange blossom water and vanilla.
Mix until you get a smooth, slightly sticky dough.

Resting the dough

Form the dough into a ball and let it rest for about 1 hour in the refrigerator (this makes it easier to shape).

Shaping the bugnes

Roll out the dough on a floured work surface to about 3 mm thick.
Cut out diamond shapes with a knife and make a small incision in the center of each bugne.

Airfryer cooking

Preheat the airfryer to 170°C.
Place the bugnes on baking paper in the airfryer basket.
Cook for 5 to 7 minutes, turning halfway through, until golden brown.

Tasting

Sprinkle with icing sugar or cinnamon, and enjoy! They're perfect with a coffee, tea, or even as a post-workout shake.

  • Carbohydrates: ~7 g
  • Lipids: ~1.5 g

Our opinion on this version

Honestly, I was skeptical before trying it. Whey in cooking can quickly give off a weird texture if you use the wrong amount. But here, with the right balance between flour and other ingredients, we keep a very pleasant softness (the whole Squad Nutrition team loved it). Air fryer cooking? A revolution! No bad frying smell, and above all, much less fat without losing any of the deliciousness.
