Ingredients
For the wrap:
- 200 g extra-firm tofu
- 1 tablespoon of soy sauce
- 2 tablespoons of corn flour
- 1 teaspoon of paprika
- 2 wheat tortillas
- 1 avocado, sliced
- 1 grated carrot
- 1 red pepper
- 1 cup lettuce
- Sesame seeds
For the sauce:
- 2 tablespoons of natural plant-based yogurt
- 1 tablespoon of vegan mayonnaise
- 1 teaspoon of mustard
- 1 teaspoon of maple syrup
- Salt and pepper to taste
Preparation
Step 1: Prepare the tofu
- Remove the tofu from its packaging and squeeze out excess water. Wrap it in a cloth and place a heavy object on top for 10 minutes.
- Once drained, cut the tofu into cubes or thick slices, depending on your preference.
- In a bowl, mix the soy sauce with the paprika. Add the tofu pieces and let them marinate for about 15 minutes.
Step 2: Bread the tofu
- In another bowl, add the cornflour. Take each piece of marinated tofu and coat it in the cornflour until well coated.
- In a hot pan, heat a little oil. Cook the breaded tofu for 3 to 4 minutes on each side, until golden brown and crispy.
Step 3: Prepare the sauce
- In a small bowl, combine the plain yogurt, mayonnaise, mustard, and maple syrup. Season with salt and pepper to taste. Adjust the consistency with a little water if necessary.
Step 4: Assemble the wrap
- Take a tortilla and spread a spoonful of sauce all over the surface.
- Arrange a layer of lettuce, avocado slices, grated carrots, and pepper strips.
- Place the crispy tofu pieces on top of the vegetables.
- Carefully roll up the tortilla, making sure to fully enclose all the ingredients inside. Cut the wrap in half to make it easier to eat.
